Azuki Dessert Topping: Makes about 2-3/4 cups topping. 1 cup Wel-Pac Azuki; 3/4 cup brown sugar; 1/2 teaspoon salt. Rinse azuki and cover with water; soak overnight. Drain, rinse under running water and drain well; turn into medium-size saucepan. Add 2 cups water and salt. Bring to a boil; reduce heat & simmer, covered, 45 minutes, or until beans are soft, stirring occasionally. Stir in sugar to dissolve. Remove from heat and chill. Serve plain or over vanilla ice cream, pudding or rice custard as desired. For best results, rinse azuki and cover with water; soak overnight before cooking. Use in your favorite bean recipes, cooking until tender. Or, add cooked, drained and cooled azuki to green or vegetable salads.
