Bake: all you need: 3 cups water, 1 can (6 oz) tomato paste, 1 lb. Ground beef, turkey or chicken, 2 cups shredded cheddar cheese, divided, 8 corn tortillas, 1 pkg. Lawry's enchilada sauce spices & seasonings mix. Makes 8 enchiladas. Mix water, tomato paste and spices & seasonings in saucepan until blended. Bring to boil on medium heat. Reduce heat. Simmer, uncovered, 10 minutes, stirring occasionally. Brown ground beef in skillet on medium-high heat drain fat. Stir in 1 cup of the cheese. Pour 1 cup of the enchilada sauce into 13,9-inch haline dish. Coat each tortilla in remaining sauce. Spoon mixture down center of each tortilla; fold over sides. Per seam-side down in baking dish. Spoon remaining sauce over top. Sprinkle with remaining cheese. Bake in preheated 350 degrees f oven 15 minutes. Bonus tip: chicken enchiladas: prepare as directed, using 2-1/2 cups shredded cooked chicken in place of the ground beef.
